Gingerbread Almonds Recipe - Merry Christmas

These almonds have become a firm favourite in our family.
Great for snacking or beribboned in a jar for a waste free, always welcome Christmas present. 
We have some baking in the oven right now !


Gingerbread Almonds

1 large egg white, beaten until frothy but not stiff. 
3 cups natural almonds
1/2 cup raw sugar
1/4 cup packed brown sugar
2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp allspice
1 tsp good quality salt flakes

Beat egg white until frothy. 
In a separate bowl mix together sugars, spices and salt. 
Add egg white to spices and mix thoroughly with a gentle hand. 
Add egg/spice mix to almonds and stir well to coat. 

Place almonds in a single layer on lined baking trays and bake at 170 degrees celsius for 25-30 minutes giving them a stir half way. 

Remove from oven, allow to cool, then break up with a wooden spoon.
